Vegetarian Fajita Quesadilla
This recipe is packed with vitamin A, vitamin C, potassium, and iron! I also highly recommend using this recipe with meal prepping!
Ingredients:
- 1 can black beans, rinsed and drained 
- 1/2 red onion thinly sliced 
- 1 jalapeño julienned 
- 1 red pepper julienned 
- 1/2 cheese block shredded (I used Monterey Jack) 
- 6 corn or flour tortillas 
- 2 garlic clove minced 
- 1/4 red pepper flakes 
- 1/4 tsp. chile powder 
- 1 tsp. cumin 
- 1/4 tsp. paprika 
- salt and pepper to taste 
Directions:
Sauté vegetables in skillet with olive oil for 5-6 minutes. Add beans, pepper flakes, chile powder, cumin, paprika, salt, and pepper to vegetable mixture. In separate pan over low-medium heat place 1/3 of vegetables, and 1/3 of shredded cheese onto tortilla and top with another tortilla. Cook for 1-2 minutes each side or until cheese is melted. Pair with guacamole, salsa, or sour cream and enjoy!

This recipe also makes great for leftover burrito bowls! Put peppers and beans over a bed of cilantro lime rice, and bring Chipotle to your kitchen.
